Gypsy is a non-occult minority Sim ethnicity in SimNation, where they offer fortune telling, dating services, and scientific medicines.
Likely as a result of the stereotype of gypsies (Nowadays named Romani) being tied to fortune telling becoming increasingly problematic and offensive in real life in most of Europe and parts of USA in the 2010s, gypsies were phased out of the Sims games, with the recentmost appearance being the gypsy wagon in The Sims 3: Supernatural in 2012. Earlier appearances were not retroactively renamed or changed by EA or Maxis, so it can be loosely presumed that Sims within SimNation don't treat the term as offensive.
The Sims Makin' Magic[]
Gypsy Clerk Rossar and Gypsy Clerk Yuri run a merchant stand in Magic Town, including baking ingredients, berries, and posters.
The description of Rowena's Waiting Window mentions Gypsy King Henrik, who at some point was kidnapped for 30 years. His wife, Queen Rowena Ypolos, lit candles for 30 years in the hopes of guiding him home, and they were eventually reunited. To commemorate those events, Gypsy Sims leave candles in their windows in honor of her devotion.
The description of Maid in the Shade mentions Liliana Sidi, The Princess of the Gypsies, who spent the majority of her short life shrouded in mystery, and whose descendants worked to pass on her story. As a result, she is now recognized as a kind of fantastical hero.
The Final Word Fortune Machine contains an animatronic gypsy called Mea Fortuna.
Gypsies are also mentioned in the Gypsyland Auction: Lot #927 and #330 floor tiles, said to be set pieces from the musical performance of "I Wish I Were A Gypsy" and the performance of "My Gypsy Darling" respectively.
The Sims 2: Nightlife[]
The gypsy matchmaker forms a significant part of the expansion pack's newly added features, by setting up blind dates for Sims. The more the Sim pays the matchmaker, the closer will the date's compatibility be with the Sim.
They also sell scientific potions, as a quicker alternative to crafting them with the SimSanto Inc. Biotech Station. Specifically, they sell:

The Sims 2: Seasons[]
The Adventurer career has a chance card where the player can direct the employed Sim to either ask a gypsy or the Landgraab clan's accountant Spencer Oswald for info on the Landgraabs' ancestor Gregory Landgraab. Picking the gypsy option has an overwhelming chance (87%) of resulting in failure and demotion.
The Sims 2: Freetime[]
If Sims in the active household have a high lifetime aspiration and hobby enthusiasm, the matchmaker may sneak over to their house and leave a Dusty Old Lamp, which can be used to summon a genie.
The Sims 3[]
The base game wall decoration "Heinrich Stübbman and the Gypsies" costs §45 in-game. It is ambiguous in the item's description whether the band members were intended to be Romani or if it was just their band name:
"The band that's taking the world by storm! The Gypsies provide a solid rhytmic foundation, but it's really Stübbman's hilarious antics that drive this group."
The Sims 3: Supernatural[]
The gypsy wagon rabbit hole is the place Sims work if they've joined the fortune teller career, and Sims can also receive fortune telling inside for a price.

Barnacle Bay[]
In Barnacle Bay (released in 2010), the household bio of Rose Rome says that she, quote, "is somewhat of a gypsy in how she dresses and acts", presumably referring to her long skirt, hair accessories, and necklaces.
The household bio also has suspicious use of quotation marks in the part about "odd knick knacks, some of which she claims she "found" on the beach.", seemingly implying she's a thief, making the bio pretty offensive even by the standards of pre-The Sims 4 Sims games. On top of that her Sim biography is not any better, claiming that there are "rumors that she digs through people's trash at night."
Hidden Springs[]
An uninhabited residential lot at 19 Willow Lane in the forest area, is called "Gypsy Hideaway". The game does not elaborate any further on the choice of name; a qualified guess is that was based on the house's various wallpapers.
The Sims Medieval[]
In the quest "O Fortuna", "gypsies" set up a festival in the town square featuring drinking, gambling, and fortune-telling. The festival turns out to be a ploy to pawn off a cursed object on an unsuspecting Sim as a prize for a card-playing competition, again adding to the stereotypes.
